Location: The Maggie, Breckenridge, CO

Job Summary:

The Executive Chef is responsible for all kitchen operations and assisting the General Manager in oversight of The Maggie restaurant during winter and wedding and event operations in the summer season. The Executive Chef is responsible for training and supervising all staff, including their leadership team. They also ensure staff and restaurant environment will provide guests with an exceptional culinary experience on a daily basis.

Job Responsibilities:

  • Sets the example for all other staff for sanitation and safety standards, menu knowledge, service, and overall culinary excellence.

  • Able to deliver exceptional food in a combined full service/fast casual atmosphere where the energy is high and the food is the show.

  • Able to understand the data provided through our robust reporting systems to deliver on the guest experience and expectations

  • Works on the floor in the restaurant, exceeding guest satisfaction as well as completing management reports pertaining to revenue accounting, food cost, scheduling, ordering products and equipment, payroll, inventory and maintaining daily logbook.

  • Understand completely and implement all policies, procedures, standards, specifications, guidelines and training programs for Breckenridge Mountain Dining.

  • Ensure that all guests feel welcome and are provided safe, properly portioned, and exciting culinary options.

  • Achieve company objectives in sales, service, food quality, appearance of facility and sanitation and cleanliness through training of employees and creating a positive, productive working environment.

  • Control orders and invoices by adhering to procedures in accordance with restaurant policies.

  • Make employment and termination recommendations consistent with Company guidelines for review.

  • Fill in where needed to ensure guest service standards and efficient operations.

  • Continually strive to develop staff in all areas of restaurant and professional development.

  • Prepare all required paperwork, including forms, reports and schedules in an organized and timely manner.

  • Ensure that all equipment is kept clean and in excellent working condition through personal inspection, timely work-order submissions and by following the restaurant’s preventative maintenance programs.

  • Oversee and ensure that restaurant policies on employee performance appraisals are followed and completed on a timely basis.

  • Schedule labor as required by anticipated business activity while ensuring that all positions are staffed when and as needed and labor cost objectives are met.

  • Be knowledgeable of restaurant policies regarding personnel and administer prompt, fair and consistent corrective action for any and all violations of company policies, rules and procedures.

  • Fully understand and comply with all federal, state, county and municipal regulations that pertain to health, safety and labor requirements of the restaurant, employees and guests

Job Requirements:

  • High school diploma or equivalent

  • Must be able to lift and carry 50+ lbs

  • Minimum 5 years of leadership experience with at least one year at a managerial level

  • Must be fluent in English - required. Fluent in Spanish

  • Must have excellent leadership, communication, guest service, problem-solving and multi-tasking skills

  • Must be aware of safety and sanitation guidelines

  • Bachelor’s degree or equivalent

  • Experience in a high-volume, fast-paced work environment

  • Must be available to work holidays including: Thanksgiving, Christmas Day, December 26th through January 4th, Presidents’ Day Weekend, and any other holidays as requested .

  • ServSafe (or ability to obtain)

  • Degree in Culinary Arts

  • Proficient computer skills

  • Full Service restaurant and high volume QSR experience preferred
